About Phil & Simon Thompson
When you look at the Thompson Bros. portfolio, you might not think of a place the size of a garage. The tiny, private fire station at Dornoch Castle is nevertheless home to the brand and its micro-distillery. Phil and Simon Thompson, along with three employees, are behind the independent bottler and the Dornoch Distillery, founded in 2016. The brothers developed their passion for whisky in their parents' hotel business at Dornoch Castle. Here, they established a whisky bar known far beyond the Highlands and linked their name to hand-picked premium bottlings.
