After a long time, we have finally managed to get round to sourcing and bottling an Apple Sponge. This is a Calvados from Christian Drouin, we selected Calvados from two casks to create a multi-vintage, 32 year old bottling that is composed of equal parts 1988 and 1991. It was bottled at natural cask strength of 48.6% and, being rather special and probably a one-off, we decided to bottle it in our hand-blown cognac glass for added pizzazz.
Tasting notes
Nose: deeply scented and full of pure apple character, clearly showing age but also richness and notes of honey, baked apple, pressed flowers and cedar wood. An earthy touch behind that and some exotic hardwood spices.
Palate: wonderfully oily and rich, with classic pot distillate body and weight. A nice balance of honeyed sweetness, and funker cider apple notes, leathery notes, tobaccos and dark fruits such as prune and date.
Finish: long, darkly fruity, spicy and full of complex honey tones and even a little waxy notes.
